Holiday Stuffing

Keeping it simple is often the key to an enjoyable holiday. You can't go wrong with this tried and true recipe for classic stuffing!
Ingredients
- 6 cups diced sourdough bread
- ¼ cup olive oil
- Kosher salt, to taste
- Cracked black pepper, to taste
- 4 tablespoons unsalted butter
- 1 large onion, medium diced
- 4 carrots, medium diced
- 6 stalks celery, medium diced
- 2 fennel bulbs, medium diced
- ¼ cup thyme leaves
- ½ cup chopped sage
- 4–6 cups chicken stock
Preparation
Preheat oven to 325°F.
Line a large, rimmed baking sheet with parchment paper. Toss the bread with the oil and season with salt and pepper. Transfer to the prepared baking sheet and toast in the oven until golden brown, about 10 minutes.
Meanwhile, heat a skillet over medium heat. Melt the butter and sauté the onion, carrot, celery and fennel until just tender, 8–10 minutes. Add the herbs and remove from heat.
Increase oven temperature to 350°F.
Combine the toasted bread with the sautéed vegetables and just enough stock to make the mixture moist but not break down the bread. Season with salt and pepper, then transfer to a baking dish.
Bake until the top is golden brown, 20–25 minutes.
