Serve this hearty, mayo-free bean and tuna salad with crostini for an easy, flavor-packed snack or starter everyone will love.
Ingredients
- 2 cans (6 ounces each) tuna, flaked
- 1 can (14 ounces) butter beans, drained and rinsed
- ½ cup green olives, slivered
- ¼ cup roasted red peppers, julienned
- 2 tablespoons capers, rough chopped
- 2 tablespoons chopped parsley
- 1 bunch scallions, sliced
- Zest of 1 lemon
- 2 tablespoons Champagne vinegar
- 4 tablespoons extra virgin olive oil
- Kosher salt and black pepper, to taste
Preparation
Place all ingredients except salt and pepper in a work bowl and toss gently to combine. Season to taste with salt and pepper, then serve.
