Pan-Roasted Salmon

First seared on the stove then finished in the oven, this simple salmon preparation is the perfect balance of crisp and tender.
Ingredients
- 2 tablespoons olive oil
- Kosher salt, to taste
- Cracked black pepper, to taste
- 4 salmon fillets (6 ounces each), skin-on, scaled
Preparation
Preheat oven to 425°F.
Heat a large nonstick, oven-proof frying pan over high heat, then add olive oil and heat until just before smoking point. Season salmon with salt and pepper, then place into hot oil skin-side up, placing fish away from you to minimize chances of oil splatter and burns. Sear until fillets start to brown, about 2–3 minutes.
Place pan in the oven and roast for 5 minutes, or to desired doneness. Remove pan from oven and remove salmon from frying pan, being careful to keep crusted presentation side intact. Serve skin-side down with your favorite starch and vegetables.
