Gruyère, Bacon & Onion Grilled Cheese

Gruyère, bacon and onion are a true trifecta of tastiness in this tantalizing grilled cheese sandwich!
Ingredients
- 1 ounce unsalted butter, softened, divided
- 2 ciabatta rolls, split
- 8 ounces Gruyère, sliced
- 2 ounces crispy bacon
- 4 ounces caramelized onions
- 1 ounce fresh thyme, chopped fine
Preparation
In a large nonstick frying pan, heat half the butter over medium-low heat.
Spread the remaining butter on one side of each of the four split ciabatta rolls, then place bread butter-side-down into the frying pan. Arrange the sliced Gruyère on two of the slices of bread. On the remaining slices, place the bacon, caramelized onions and thyme.
With the fillings facing each other, place the bacon, onion and thyme slices onto the two slices with cheese. Grill for about 1 minute, until golden. Flip the sandwiches to ensure even browning on both sides.
Serve immediately.
