Spiced Tofu Tacos with Pico de Gallo

Both filling and nutritious, these spiced tofu tacos with fresh pico de gallo make a delicious vegetarian entrée. Even if you’re not a vegetarian, give them a try!
Ingredients
- 8 ounces firm tofu
- ½ teaspoon chili powder
- ½ teaspoon garlic powder
- ½ teaspoon ground cumin
- ½ teaspoon ground coriander
- ½ teaspoon kosher salt, plus more to taste
- 1 tablespoon olive oil
- ½ yellow onion, small diced
- 2 Roma tomatoes, small diced
- ¼ bunch cilantro, chopped
- ½–1 jalapeño, small diced (seeded for less spice)
- 2 limes
- 6 corn tortillas (3-inch diameter)
Preparation
Crumble the tofu into approximately ½-inch pieces. Mix together the chili powder, garlic powder, cumin, coriander and ½ teaspoon salt, then toss the crumbled tofu with the spice mix.
Heat the olive oil in a nonstick sauté pan on medium-high heat. Add the seasoned tofu in a single layer and let brown. When the bottom has browned, gently toss and continue to cook until tofu has fully browned. Remove from heat and hold warm.
To make the pico de gallo, toss together onion, tomato, cilantro, jalapeño and juice of 1 lime. Adjust seasoning with salt.
Heat the tortillas in a skillet until they just start to brown. Serve the tofu in the tortillas topped with the pico de gallo with lime wedges on the side.
