This award-winning, semi-hard Swiss cheese is rich yet delicately sweet, made with a unique regional recipe involving resinée, a slow-cooked apple and pear syrup with which it gets rubbed six times during the aging process. Le Brigand du Jurat is named after the legendary Brigands, or forest guardians akin to Swiss Robin Hoods. Proceeds from this cheese help fund reforestation initiatives, like that of the Arbor Day Foundation!
