In a truly unique partnership, two guys named Jeff collaborate to make Jeff’s Select Gouda. Wisconsin master cheesemaker Jeff Wideman of Maple Leaf makes the cheese in Wisconsin, and Jeff Jirik of Caves of Fairbault ages the gouda in his sandstone caves in Minnesota; thus the moniker “Cheesemakers Without Borders. “ Warm cave aged for at least nine months and rubbed in annatto, this cheese develops a deep orange colored rind with an earthy note.
