Now is the perfect time to check out the local summer squash available in our produce department: we have yellow crookneck, zucchini and eightball varieties on hand that are super-delicious this time of year.

Now is the perfect time to check out the local summer squash available in our produce department: we have yellow crookneck, zucchini and eightball varieties on hand that are super-delicious this time of year. Squash cooks well on the grill or in a stir-fry, as well as being rich in both potassium and vitamin C (great for heart health), and they contain just 36 calories per cup. Look for squash with unblemished and tender skin (the skin is a good source of those vitamins mentioned above, so you’ll want to eat it, too), and don’t forget that for squash-averse family members, you can sneak a serving into their diets by grating it and using in muffin or quick-bread recipes.
