In the kitchen, saffron is an aromatic spice with flavors of lemon, citrus and honey and a slightly metallic note. Since saffron needs moisture to release its flavor, a great way to extract it is to soak the threads in hot (not boiling) liquid for 5-20 minutes, then add both the saffron and the liquid to the recipe.
If you want the look or flavor without the cost, annato and turmeric are two less expensive spices that can be used as substitutions for saffron in many cases.
