Cheese, Please: Handcrafted in La Mancha region of Spain, Manchego Cheese is made with milk from free-range Manchega ewes. In old-world tradition, the cheese is aged in natural caves until the ideal flavors develop. At three months of aging, Manchego is supple and moist with a fruity grassy flavor. At six months, the cheese develops a caramel nutty flavor, and at one year, the cheese has a crumbly texture and sweet taste.
