Yeild: 20 Biscuits Prep Time: 30 minutes Cook Time: 30 minutes
Ingredients:
- 1¼ cups brown rice flour
- 2 tablespoons ground flaxseed
- 1 extra large egg
- 6 tablespoons pure pumpkin puree
- 2 tablespoons water
- Whole flaxseeds, for garnish
Preparation:
Preheat oven to 350°F degrees.
Combine brown rice flour and ground flaxseed in a bowl. In a separate bowl, mix egg and pumpkin until smooth. Add wet ingredients to dry ingredients, then add water one tablespoon at a time until dough sticks.
Knead dough together, then roll out to about ¼ inch thick. Use a cookie cutter or knife to cut biscuits into preferred shapes. Roll out excess dough and cut more biscuits until all remaining dough is used. (If dough gets too sticky, use a little rice flour to coat the surfaces.)
Place biscuits on parchment-lined baking sheet and top each biscuit with a few whole flaxseeds. Bake 30-45 minutes, until the top of the biscuit has dried out completely, then cool on wire racks.
