New Year's Resolution No. 1: Be More Like Piave Vecchio

As I was thinking about new year’s resolutions this season, I stumbled across the following description of one of my favorite cheeses, Piave Vecchio: “…named ‘extra old’ for its extra time in the cellar — an investment that pays off in a rock-hard body glistening with a deep golden tan.”
As I was thinking about new year’s resolutions this season, I stumbled across the following description of one of my favorite cheeses, Piave Vecchio: “…named ‘extra old’ for its extra time in the cellar — an investment that pays off in a rock-hard body glistening with a deep golden tan.”
After a quick chuckle, I thought to myself, this year I’m going to be more like Piave Vecchio. Now, don’t kid yourself, I’m not going to work my butt off in the gym or anything … nope, I’m going to spend more time in a cellar!
Okay, just kidding. But all jokes aside, Piave Vecchio is really a remarkable cheese, one that is often referred to as a young Parmigiano-Reggiano. It’s packed with a broad pallet of tropical fruits, sweet nuts and berries. If given a glass of fruity red wine, it might even sing! Come on, who can pass up that?
