Homemade English muffins, an easy way to poach eggs en masse, fresh hollandaise sauce and a few beautiful Benedict combos… Brunch is about to get even better.
Step 1. Prepare the English Muffins: Make these soft and chewy English muffins a day (or a week) ahead to save time later—they freeze great!
Step 2. Prepare the Eggs: Poaching eggs one by one may not be efficient for a brunch with friends, but poaching eggs in a muffin tin works just as well!
- To get started, heat oven to 300°F.
- Place 1 tablespoon of water in each well of a nonstick muffin tin.
- Crack an egg into each well and bake for 8-12 minutes, or until the whites are set and the yolks are still runny.
- Use a rubber spatula to gently remove cooked eggs from the tin.
Step 3. Prepare the Hollandaise Sauce: Along with being delicious over Eggs Benedict, this rich and creamy sauce also goes great with asparagus, salmon and more.
