What could be better than a crisp apple on a cool autumn day? I’ll tell you what’s better: a crisp apple with a chunk of delicious Saint Agur cheese! Made from pasteurized cow’s milk enriched with cream, this double crème blue cheese is crafted in the mountainous Auvergne region in France by the Bongrain Cheese Company. It is aged between 60 and 80 days and develops a subtle spiciness that is well balanced by its creamy texture. It is especially delicious paired with some of the sweeter apple varieties like Cameo or Ambrosia. The creaminess of the cheese is contrasted with the crisp texture of the apple, and the sweet flavor of the fruit plays well off the saltiness of the cheese. Its decadent texture and nuanced yet approachable flavor make it one of my favorites. • REBEKAH BAKER (Specialty Cheese)
