If you’re craving a hearty noodle dish, we recommend filling your bowl with udon. Udon is a thick noodle with a nice texture that’s suitable for hearty preparations like stir fries and soups. Made from organic soft wheat, udon noodles are high in adhesiveness and elasticity, and they are often used interchangeably with soba noodles. Some dishes even mix the soba and udon noodles for a variety of textures. To cook udon, boil the noodles for ten minutes if using for soup, or eight minutes if stir–frying (the noodles will continue to cook in the wok).
