Verlasso salmon is a premium, farm–raised salmon from the cold, clear ocean waters of Patagonia. These salmon are raised in spacious ocean “neighborhoods” with a low density of fish, making for a healthier surrounding ecosystem. We like the environmental practices of this company when it comes to farm–raising fish. Verlasso’s practices were recognized recently when they received the “Good Alternative” ranking from the Monterey Bay Aquarium Seafood Watch program, making them the first ocean–raised farmed salmon to ever receive such distinction. Perhaps the best part is that Verlasso’s environmental practices result in a delicious salmon with a bright and delicate flavor. It has a slightly higher fat content than wild salmon, giving it a buttery, yet firm texture. When cooking it, you will find that the fish maintains its moisture and is delicious no matter how you prepare it. If you end up with a little extra, that’s okay—it will be just as delicious for lunch the next day! • LANCE BENTON (Meat & Seafood)
