Ahi Tuna with Lemon Butter Sauce

Ahi tuna gets even better with a simple marinade before hitting the grill plus a succulent sauce to finish.
Ingredients
Ahi Tuna:
- 3 tablespoons salad oil
- Kosher salt, to taste
- 2 tablespoons cracked black pepper
- 4 tablespoons black sesame seeds
- 4 portions (6 ounces each) Ahi tuna
Lemon Butter Sauce:
- 1 cup dry or semi-sweet white wine
- 2 tablespoons white wine vinegar
- 1 small jar of clam juice
- 1 tablespoon corn starch
- 1 tablespoon water
- 4 tablespoons unsalted butter
- Juice of ½ lemon
- Kosher salt, to taste
- Cracked black pepper, to taste
Preparation
Combine salad oil, salt, pepper, and sesame seeds, then immerse tuna in the mixture and marinate for 20 minutes.
For the sauce, add wine and vinegar to a saucepan and reduce by half. Add the clam juice and reduce ¼ more. Combine corn starch and water to create a slurry, then add to the sauce to thicken. Finish the sauce with butter and lemon juice, then adjust seasoning to taste with salt and pepper.
Grill marinated tuna over direct, medium-high heat for 2–4 minutes per side for medium-rare. Serve with lemon butter sauce.
