Pomegranate Molasses

A little effort goes a long way in making this sweet sauce that's delicious with roasted meats and cocktails alike.
Ingredients
- 4 large pomegranates
- ⅓ cup granulated sugar
- 1 lemon, juiced
Preparation
Remove the arils from the pomegranates. Place in a blender and process on low speed for 5–10 seconds to break up the seeds and release the juice. Strain out the seeds through a fine mesh strainer, pressing to extract all the juice. This should yield about 3 cups of juice.
Place the pomegranate juice, sugar and lemon juice in a sauce pot and reduce over medium heat until 1 cup of liquid remains. Chill until ready to use.
