Shrimp with Marinated Cucumbers & Ginger Sesame Salad

For something fresh, flavorful, and fun, whip up this simple salad with tender shrimp, marinated cucumbers, and a homemade ginger sesame dressing.
Ingredients
Marinated Cucumbers:
- 2 large cucumbers, peeled and sliced
- 2 teaspoons kosher salt
- 4 tablespoons rice wine vinegar
- 2 tablespoon granulated sugar
- 1 teaspoon soy sauce
Ginger Sesame Dressing:
- ½ cup minced onion
- ½ cup peanut oil
- ⅓ cup rice wine vinegar
- 2 tablespoons water
- 3 tablespoons grated ginger
- 2 tablespoons minced celery
- 2 tablespoons ketchup
- 4 teaspoons soy sauce
- 1 tablespoon sesame oil
- 2 teaspoons granulated sugar
- 2 teaspoons lemon juice
- 1 teaspoon chopped garlic
- ½ teaspoon kosher salt
- Cracked black pepper, to taste
Shrimp & Salad:
- Iceberg lettuce, shredded
- 1 bag coleslaw mix
- ¼ cup chopped cilantro
- ½ pound cooked shrimp (16–20 count)
- 1 bag crispy chow mein noodles, for garnish
Preparation
To make the marinated cucumbers, sprinkle cucumber slices with salt and let stand for 30 minutes, then squeeze out excess moisture.
Combine vinegar, sugar, and soy sauce in a bowl and mix well. Pour the vinegar mixture over the cucumber slices and mix well. Let stand for at least 30 minutes.
For the ginger sesame dressing, combine all ingredients in a blender and blend on high speed for approximately 30 seconds, or until well incorporated.
To assemble the salad, place iceberg lettuce, coleslaw mix, and chopped cilantro in individual salad bowls. Top with marinated cucumbers and cooked shrimp, then drizzle with ginger sesame dressing and garnish with crispy chow mein noodles.
