Sweet & Spicy Meatballs

Simmer these rich and hearty meatballs in a finishing sauce made with habanero marionberry preserves—or substitute your own favorite spicy fruit preserve to create the ideal blend of sweet and spicy perfection.
Ingredients
- 1 pound ground beef
- 1 tablespoon chopped sage
- ¼ cup dried cranberries, chopped
- 2 tablespoons chopped Italian parsley
- ½ cup yellow onion, fine diced
- ½ cup breadcrumbs
- 2 tablespoons grated Parmesan cheese
- ¼ teaspoon thyme
- 2 teaspoons kosher salt
- 1 teaspoon cracked black pepper
- 1 large egg
- 1 cup heavy cream, divided
- 2 cups beef stock
- ¼ cup habanero marionberry preserves
Preparation
Preheat oven to 400°F.
Mix together the ground beef, sage, cranberries, parsley, onion, breadcrumbs, Parmesan, thyme, salt, pepper, egg, and half the cream in a work bowl. Shape mixture into 1-ounce meatballs, then arrange on a lined baking sheet. Bake 15–20 minutes, to an internal temperature of 155°F.
While the meatballs are cooking, heat the beef stock in a wide sauce pot over high heat. Reduce stock by half, 20–25 minutes, then add the preserves. Bring to a boil, add the remaining cream, and reduce to a simmer.
Once meatballs are cooked, add them to the sauce and simmer until sauce coats the meatballs. Serve immediately.
