Vegan Toffee

This tantalizing toffee is delicious on its own or in our recipe for Vegan Gluten-Free Oatmeal Cookies.
Ingredients
- ½ cup cultured vegan butter
- ½ cup granulated sugar
- ¼ teaspoon salt
- ½ teaspoon vanilla extract
Preparation
Bring vegan butter, sugar and salt to a boil in a small, heavy-bottomed sauce pot. Cook until a candy thermometer reads 300°F, about 5–7 minutes. Remove from heat and stir in the vanilla.
Carefully pour onto a silicone baking sheet and let cool to room temperature.
To break toffee into shards, drop firm toffee on the counter or chop with a knife.
