Rosemary Citrus Chicken Thighs

Both light and flavorful, this simply delicious grilled chicken may become a regular in your recipe rotation.
Ingredients
- 2 tablespoons chopped fresh rosemary
- 2 cloves garlic, minced
- Zest and juice of 1 lemon
- 1 tablespoon olive oil
- Kosher salt, to taste
- Cracked black pepper, to taste
- 6 chicken thighs, bone-in, skin-on
Preparation
Mix rosemary, garlic, lemon zest, lemon juice, olive oil, salt, and pepper in a work bowl until well combined. Add chicken thighs and toss gently untill evenly coated. Set aside to marinate for 20 minutes.
Preheat one side of the grill to medium-high heat, leaving the opposite side cooler for indirect heat.
Place marinated chicken skin-side up on the cooler side of the grill and cook for 12–14 minutes, turning clockwise 90 degrees halfway through.
Once the internal temperature reaches 155°F, flip chicken and place skin-side down halfway between the hot and cool sides of the grill. Cook for 4–6 minutes, turning clockwise 90 degrees halfway through, until the internal temperature reaches 165°F.
Allow chicken to rest 5 minutes before serving.
