Cashew Honeychew

Sweetened with honey, dappled with nuts, and covered with a fine chocolate finish, this tasty confection is sure to please!
Ingredients
- ½ cup (1 stick) unsalted butter
- 1½ cups raw honey
- 1 teaspoon kosher salt
- 1 teaspoon vanilla extract
- 1 pound unsalted cashews, chopped
- 12 ounces semi-sweet chocolate chips
- 2 teaspoons cocoa powder, for dusting
Preparation
In a medium saucepan, melt the butter and honey over medium heat to the soft crack stage, 290°F on a candy thermometer. Remove from heat and stir in the salt and vanilla, then stir in the nuts.
While butter and honey are cooking, place chocolate chips in a microwave-safe bowl and heat gradually, stirring at frequent intervals, until the chocolate is fully melted.
Pour butter and honey mixture onto a well-greased or parchment-lined cookie sheet, then top evenly with melted chocolate and let cool for at least 4 hours.
Dust with cocoa powder then serve.
