Carnitas Nachos

Homemade cheese sauce and a whole cup of carnitas make these hearty nachos a sure-fire hit for any occasion!
Ingredients
Cheese Sauce:
- 3 tablespoons unsalted butter
- 3 tablespoons all-purpose flour
- 2½ cups whole milk, hot
- 1 cup shredded cheddar cheese
- 1 jalapeño, minced
- Kosher salt, to taste
Nachos:
- ¾ cup tortilla chips
- 1 cup carnitas
- ¼ cup pickled jalapeño slices
- ¼ cup pico de gallo
Preparation
For the cheese sauce, melt butter in a small saucepan over low heat and stir in flour. Cook for 1 minute without browning mixture, then stir in hot milk and bring to a boil. Reduce to a simmer and stir in the grated cheese and fresh jalapeños. Immediately remove the sauce from the heat and salt to taste.
To build the nachos, arrange chips and meat on a large serving plate. Pour cheese sauce over the meat and chips (reserving ⅓ for dipping), then garnish with remaining toppings.
To keep the flavors coming, serve with a dollop of sour cream or guacamole.
