Burgundy Pepper Tri-Tip with Cucumber Red Onion Relish

Ingredients
- 1 English cucumber, sliced thin
- 1 small red onion, sliced thin
- ¼ cup red wine vinegar
- ¼ cup extra virgin olive oil
- Kosher salt, to taste
- Cracked black pepper, to taste
- 1 Nugget Market's Marinated Burgundy Pepper Tri-Tip Roast
Preparation
Gently toss together sliced cucumbers, onions, olive oil, vinegar, salt and pepper until well incorporated. Refrigerate for 1 hour.
Preheat oven to 400°F.
Roast tri-tip for 20–30 minutes, or until a probe thermometer inserted into the thickest part reads 115°F.
Rest roast covered loosely with aluminum foil for 15–20 minutes, then slice, top with relish and serve.
