Ingredients
- ⅘ pound kosher salt
- 1⅕ pounds granulated sugar
- 1¼ gallons water
- 3 pounds salmon fillet
Preparation
Mix salt, sugar and water until completely dissolved. Immerse salmon in brine for 1 day under refrigeration.
Rinse salmon, pat dry and hot smoke for 20–30 minutes.
