Oatmeal Cookies

With harvest spices, raisins and pecans, these hearty classics have a warm, seasonal twist.
Ingredients
- 1 cup all-purpose flour
- ¾ teaspoon baking soda
- ½ teaspoon salt
- ½ teaspoon ground allspice
- ½ teaspoon ground cinnamon
- ⅛ teaspoon ground mace
- ¾ cup unsalted butter, room temperature
- ½ cup sugar
- ¾ cup packed light brown sugar
- 2 large eggs, room temperature
- 1 teaspoon vanilla extract
- 2¾ cups rolled oats
- ¾ cup raisins
- ¾ cup chopped pecans
Preparation
Preheat oven to 350°F.
In large bowl whisk, together flour, baking soda, salt, allspice, cinnamon and mace.
In a mixer, combine butter and granulated sugar until light and fluffy, occasionally scraping down the inside of the bowl. Add brown sugar and mix until incorporated. Add eggs one at a time and then vanilla. On low speed, add flour mixture, occasionally scraping down the inside of the bowl. Finally, add the oats, raisins and pecans.
Scoop 1-ounce cookies and place on baking sheet. Bake for approximately 15 minutes.
