Starring fresh broccoli, mixed greens and cucumber, this simple salad makes it easy to go green!
- 1 tablespoon olive oil
- 1 teaspoon sesame oil
- 1½ cups broccoli florets
- 1 teaspoon black sesame seeds
- 1 teaspoon white sesame seeds
- 2 cups mixed greens
- ½ cup cucumber, sliced thin
- ¼ cup scallions, sliced
- 2 tablespoons rice vinegar
Heat olive and sesame oils in a nonstick skillet, then stir-fry broccoli for about 2 minutes. Reduce heat, cover skillet and cook until broccoli turns bright green and slightly tender.
Toss broccoli with sesame seeds, then cool quickly in a single layer in the refrigerator to preserve the vibrant color.
Combine mixed greens, cucumber and scallions in a salad bowl with cooled broccoli. Toss with rice vinegar and serve.
