Japanese Beef Curry

This popular Japanese comfort food can also be made with pork or chicken.
Ingredients
- 3 cups beef stock
- 1 tablespoon canola oil
- 1 pound beef stew meat, cut into ¾-inch cubes
- Salt and pepper, to taste
- 2 tablespoons butter
- 1 teaspoon ginger, minced
- 2 cloves garlic, minced
- 1 onion, small diced
- 3 tablespoons flour
- 3 tablespoons curry powder
- 1 tablespoon tomato paste
- 1 carrot, roll cut
- 1 russet potato, peeled and cut into wedges
- 1 bay leaf
- 1 teaspoon honey
- 1 tablespoon soy sauce
Preparation
Bring beef stock to a simmer in a small pot. In a separate, larger pot, heat canola oil. Season cubes of stew meat with salt and pepper, then sauté in large pot over medium-high heat for 2–3 minutes, not cooking through. Remove from heat and set aside.
In the same pot, add butter, ginger, garlic and onion and cook for 5 minutes or until aromatic. Add flour, curry powder and tomato paste, stir and cook for a few more minutes. Slowly add the warmed beef stock to this mixture, stirring to avoid lumps. Add carrots, potatoes, bay leaf and beef and simmer gently for 30 minutes.
After simmering, add the honey and soy sauce to taste. Serve with steamed white or brown rice.
