SPICED APPLE WALNUT BREAD WITH CREAM CHEESE FROSTING
Customize your quick bread with these easy variations or your own favorite fruits, nuts, and spices!
Ingredients
Basic Quick Bread:
- 1 cup shredded or mashed fruit (see variations)
- ½ cup vegetable oil
- ½ cup yogurt
- 2 eggs
- 1 teaspoon vanilla extract
- 1½ cups all-purpose flour
- ¾ cup granulated sugar
- ¼–1 cup chopped nuts and/or dried fruit (see variations)
- 1 teaspoon baking powder
- ¼ teaspoon baking soda
- ½ teaspoon kosher salt
- Additional spices (see variations)
Banana Nut Bread:
- 1 cup mashed bananas
- 1 cup chopped walnuts
- 1 teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
Pear Hazelnut Bread with Lemon Glaze:
- 1 cup peeled, shredded d’Anjou pears (about 3), squeezed dry
- ¼ cup toasted hazelnuts, chopped
- ¼ teaspoon ground cloves
- 1 teaspoon lemon zest
- ½ cup powdered sugar, for glaze
- 1 tablespoon lemon juice, for glaze
Spiced Apple Walnut Bread with Cream Cheese Frosting:
- 1 cup peeled, shredded Pink Lady apples (about 3), squeezed dry
- ½ cup walnuts
- ½ cup dried cranberries
- 1 teaspoon ground cinnamon
- ½ teaspoon ground ginger
- ¼ teaspoon ground nutmeg
- 2 ounces softened butter, for frosting
- 2 ounces cream cheese, for frosting
- 1 cup powdered sugar, for frosting
- ½ teaspoon vanilla, for frosting
Preparation
Preheat the oven to 350°F. Line a 9x5-inch pan with parchment paper, leaving an overhang on the long sides, then coat with cooking spray.
Whisk mashed or shredded fruit with vegetable oil, yogurt, eggs, and vanilla.
Separately, whisk together flour, sugar, chopped nuts and/or dried fruit, baking powder, baking soda, salt, and additional spices according to chosen variation.
Fold the wet ingredients into the dry ingredients, then pour batter into prepared loaf pan.
Bake 55–65 minutes, until toothpick inserted into the center of the loaf comes out clean.
If using a glaze or frosting, combine all ingredients and mix until smooth. Let bread cool completely before icing.
