Chocolate Cheesecake Muffins

Ingredients
Filling:
- 8 ounces cream cheese
- 1 egg
- 1 cup chocolate chips
- ⅛ teaspoon kosher salt
- ⅓ cup granulated sugar
- 1 tablespoon lemon juice
Muffins:
- 1½ cups all-purpose flour
- 1 cup granulated sugar
- ¼ cup cocoa powder
- 1 teaspoon baking soda
- ½ teaspoon kosher salt
- 1 cup water
- ½ cup cooking oil
- 1 tablespoon white vinegar
- 1 teaspoon vanilla extract
Preparation
Preheat oven to 325°F.
Combine all ingredients for the filling and set aside.
Sift the dry ingredients for the muffins together. Separately, mix water, oil, vinegar, and vanilla together, then combine dry and wet ingredients and stir until well-blended.
Line muffin pan with paper liners. Fill each cup ⅓ full with muffin batter, add 1 tablespoon cream cheese mixure, then fill with batter to ⅔ full.
Bake for 24–26 minutes.
